High Protein Broccoli Omelette Recipe for Weight Watchers

This recipe was inspired because I had lots of broccoli that was going bad!!! My tip is don’t throw out old Veggies!! They are great in Omelettes!!!

This makes one very large Broccoli Omelette but you can make several and warm-up for other meals during the week! I love bringing them to work and microwave for a few minutes!!

For those who are on WW 💙💜 it’s 1 or 2sp depending on how much Cheese you add!

How to make Broccoli Omelette

Ingredients:

  1. 1 cup of egg whites
  2. 1 cup or more of chopper Broccoli
  3. 1/4 cup fresh or canned mushroom
  4. 1 tsp parsley or any herb
  5. 1 tbs shredded carrots optional
  6. 2 tbs or more peppers ( red, yellow, orange or any other vegetables)
  7. 1 to 2 tbs or more of any low-fat cheese
  8. Sprinkle of garlic and onion powder
  9. Salt and pepper to taste

Directions:

  • In a medium skillet on a medium to high temperature spray well
  • Add broccoli and mushrooms until soft
  • Add all other vegetables
  • Add egg whites
  • Add seasoning
  • Allow cooking by using a spatula to go around the sides of the omelette.
  • Add cheese or add on top of the omelette or on both it’s up to you!
  • Keep open-faced or fold over
  • Eat immediately with a nice large salad and choice of bread, cracker, bun, tortilla, etc.
