This recipe was inspired because I had lots of broccoli that was going bad!!! My tip is don’t throw out old Veggies!! They are great in Omelettes!!!
This makes one very large Broccoli Omelette but you can make several and warm-up for other meals during the week! I love bringing them to work and microwave for a few minutes!!
